A very simple and clean smoothie that will fill a few corners…
- 1 medium carrot
- 1 medium zucchini
- 5 dried apricots
- 1 cup water
This is a simple smoothie and is all the better for it. If you want it smooth and creamy then whizz it for a little longer – or shorter if you like apricot bits in your smoothie (which I do).
The carrot and zucchini add lots of bulk and goodness – the apricots add sweetness. The flavour is of apricots – and it’s a very clean taste.
At just over 100 calories this is a smoothie that you can have anytime and it will fill you up for a while. It’s about the same number of calories as two fingers of Kit Kat. No bad … not bad at all.
