Shocking pink in colour, with spice from the ginger and yet the smoothness of the beetroot and yogurt. This is one of my all-time favourite smoothies…

  • 1 orange – peeled
  • Slice of beetroot
  • Knob of ginger root
  • 1 teaspoon of honey
  • ¼ cup plain yogurt
  • ½ cup iced water

The result is absolutely delicious, and I just love the vibrant pink colour.

The beetroot taste is well balanced/complemented by the other ingredients. This is a great one to give anybody that says they don’t like beetroot.

The orange will give the smoothie a slightly chewy texture – don’t try to get rid of that as you’ll be running the blender too long and that warms up the mixture.

The yogurt and the honey finish it off. You can adjust these quantities if you want. Make sure you use a plain yogurt.

Note: These ingredients make enough for one person. Just scale them up if you need more.
