This is a wonderfully light summer drink that has subtle hints of lemon and ginger.

  • 1 handful of spinach
  • ½ apple – cored
  • ½ avocado – de-stoned and skinned
  • 1 tablespoon lemon juice
  • Small chunk of root ginger
  • 1½ cups water and ice

The key to this one is to use lots of water and ice – to make the smoothie cool and not too thick. Also, not to put too much ginger and lemon in. You want both of these to be subtle tastes – as the mixture is so light.

The result is a really light and cool smoothie with a great flavour – ideal for the summer.

Note: These ingredients make enough for one person. Just scale them up if you need more.
