A thick and creamy smoothie that packs quite a punch…
- ¼ cup pumpkin seeds
- 1 large plum
- ½ cored apple
- Large handful of spinach
- 1 cup apple juice
First, take the pumpkin seeds and apple juice and whizz for a few seconds. If you like bits in your smoothie 10 seconds will do … else, whizz until you can see the bits have almost gone. Then just throw in the rest of the ingredients and blitz.
The result is a smoothie that has oodles of taste, as well as heaps of vitamins and minerals.
Pumpkin seeds are especially nutritious and packed full of trace elements like zinc, copper and manganese – quite the little power house! Perfect for adding to smoothies.
