Sweet Potato Pie.

A comforting winter smoothie – like freshly baked pie…

  • 1 small sweet potato
    (cooked and unpeeled)
  • 3 tablespoons apple sauce
  • 1 tablespoon maple syrup
  • 2 teaspoons ground flax
  • 12 almonds
  • ¼ tea cinnamon
  • ¼ tea vanilla extract
  • 1½ cups water
  • Sprinkle of nutmeg on top

This is a smoothie recipe stolen from the wonderful Well & Good NYC website. There it’s called the Fall in Love Smoothie.

I’ve had to update it a bit, as I can’t get all the ingredients. However, I’ve tried to keep it as close to the original as possible.

To quote from the website…

“We’re not going to lie: this smoothie is as comforting as a freshly baked pie—only without firing up the oven. Or the flour, sugar, and eggs. It effectively curbs that craving for something sweet with vitamin-packed seasonal ingredients. Which is why we’ve fallen hard for this smoothie and will be making it all month instead of buying those bags of bite-size trick or treats.”

To make – just blitz the almonds and water first. Then drop in the rest of the ingredients and whiz away.

The result is rich, thick, luxurious, sweet and homely. It’s also very filling – hence why I’ve put it into the Meal Replacement section.
